I recently made this apple kiwi chia pudding and it was so tasty! Kiwi fruit is in season right now and I love the taste of it. The apple and the kiwi in this chia pudding work perfectly since the apple is sweet and the kiwi is kind of tart.
WHAT IS CHIA PUDDING?
A chia pudding is made by blending chia seeds with a liquid. This can be either milk, different kinds of nut milks or even something like coconut water or just plain water. You can flavour your pudding anyway you like, such as with different kinds of fruits (e.g. banana chia pudding or berry chia pudding) or even by adding things like coconut or dried fruit or even chocolate into the mix. There are endless varieties of chia puddings to be made, you just have to play around and experiment to see what flavours you like best.
WHAT ARE CHIA SEEDS?
In case you haven’t heard about Chia seeds here’s a quick run down. Chia seeds are native to South America and Mexico and are full of nutritional goodness. Chia seeds are either black or white (I’ve found it easier to get the black kind, even though the white seeds look nicer when blended into a chia pudding) and when mixed with a liquid form a gel like substance, a lot like the texture of tapioca pudding. This gel can be used in baking in place of eggs, where people are allergic and as I mentioned above can be turned into chia pudding. Chia seeds are full of things like Omega-3 fatty acids, fiber, antioxidants, protein, calcium and they are also gluten and grain free.
Having said all that some people are sensitive to chia seeds and experience negative digestive reactions to consuming these seeds, so if you have never tried them and find yourself feeling unwell after consuming them then it’s safe to say you are sensitive or even allergic to them.
Another point I want to make here is that I don’t recommend including things like chia puddings on a regular basis in your diet. For me things like this are considered an occasional food and I would not personally consume chia puddings every morning. I prefer to stick to things like eggs, vegetables, some fruit or even leftovers from the night before for breakfast, plus I like to change things up as much as possible for my morning meal. Although chia puddings don’t have to be eaten only for breakfast, they can also be a dessert again I recommend treating it as a sometimes food.
One more thing before we get into the recipe. This Apple Chia Pudding also contains gelatin/gelatine, the brand of gelatin that I use and highly recommend is this one, if you’re in the UK you can get yours here or here. This type of gelatin is called Collage Hydrolysate which means it can be dissolved in cold/warm water and won’t gel. I usually stir it into my tea in the mornings and even add it to my bone broth or even soups for an extra boost of nutrition, it has no taste so it can really be stirred into any type of liquid. This particular brand of gelatin also comes from animals raised in their natural environment.
Ok so let’s get to this recipe shall we…
APPLE KIWI CHIA PUDDING
- Place coconut milk into a blender.
- Add in chia seeds, vanilla extract, raw honey and sea salt.
- Blend for 30secs to 1 minute, or until well mixed.
- Pour into a medium-large mixing bowl.
- Dice the apple into small pieces and stir into the coconut milk mixture.
- Stir in ½ cup diced kiwi fruit.
- Pour into desired containers and place in the fridge.
- Allow to sit for a few hours or preferably over night.
- the final result should be something that resembles tapioca pudding.
- to serve add some diced kiwi fruit on top.
